Creaminess without cream

Butter beans already contain the thing that makes cream creamy — starch, suspended in a soft cell structure. Stir them vigorously for a minute and a third of them collapse, releasing that starch into the pan. What you get is a sauce with real body and none of the heaviness.

The rest of the dish exists to give that sauce something to push against. Sun-dried tomatoes bring salt and acidity, a lot of garlic brings sweetness once it has had a minute in oil, and the greens bring a bitterness that keeps it from being one-note.

This is genuinely fast, but only if you let the beans reduce properly. Adding stock and serving immediately gives you bean soup. Six minutes of hard simmer is what turns it into something that coats a piece of toast.

Warm the olive oil in a wide frying pan over medium heat and add the garlic. Cook for 90 seconds, until it is fragrant and barely coloured.

Add the sun-dried tomatoes and smoked paprika and stir for a minute so the paprika blooms in the oil.

Tip in the beans and stir to coat. Then take a wooden spoon and press roughly a third of them against the side of the pan until they break down. This is the step that makes the sauce.

Pour in the stock, season lightly, and bring to a hard simmer. Cook for 6 to 8 minutes, stirring occasionally, until the liquid has thickened to a loose cream.

Add the shredded greens in handfuls, stirring each one until it has wilted before adding the next. This takes about 3 minutes and keeps the greens from going grey.

Off the heat, stir in the lemon juice and most of the Parmesan. Taste and adjust the salt — the beans and cheese both bring plenty, so go carefully.

Serve over toasted sourdough or with a piece of grilled fish, finished with the basil, the remaining cheese and a thread of olive oil.

Three rounds of testing turned up three things worth knowing before you start cooking.

Jarred beans beat tinned

If you can find butter beans in a jar, they are glassier and hold their shape better. Use the same drained weight and reduce the simmering time by two minutes.

It thickens as it sits

This is not a dish to hold on the hob. If you need to wait, take it off the heat and loosen with a splash of stock before serving.

Add a chilli if you want heat

One dried chilli, crumbled in with the garlic, works better than fresh here — it flavours the oil without adding water.

Questions we get a lot

Can I use cannellini or haricot beans?

Both work and both break down faster, so be gentler when you crush them. Butter beans give the best texture because they are larger and hold their skins.

Is it vegan without the Parmesan?

Yes. Swap in two tablespoons of nutritional yeast and a teaspoon of white miso for the same savoury depth.

How long does it keep?

Four days in the fridge. It will thicken considerably, so reheat with a little stock rather than water.
