Cooked twice, minimum
Nothing reaches this site having been made once. Every recipe is cooked through, start to finish, at least two more times after the developer test.

Ordinary equipment
One domestic oven, a set of supermarket pans and no sous-vide circulator. If a recipe needs a piece of kit to work, we say so up front.

Failures included
The testing notes are the point. They tell you what we got wrong, what we changed, and where the recipe will still work if you improvise.
